Naturally Sparkling Medium Dry Damson Co - ferment
To create this bottle hand sorted Damson Fruit (50%) was slowly fermented in an ex whisky barrel with the addition of some Somerset Redstreak (5%) and Dabinett. After three months of carbonic maceration freshly pressed Browns (40%) & Dabinett (5%) apple juice was introduced & normal fermentation continued until it was time to bottle.
The outcome is wild, smoky with herby red fruit aromas that leap out of the glass, & follow on in the mouth, joined by plum, raspberry & blackberry flavours as well as marzipan, spice & a hint of tannin.
Fermented with wild yeasts. With no sulphites added & no filtering or pasteurisation.
